Chicken Pesto Pressed Sandwich: Italy in a Sandwich

I love sandwiches.  Not only are they easy to make, but they are literally over a million ways to make one. You can make it toasted, grilled, pressed, or even just a classic cold cut with bread will even hit the spot! As a kid, I always clamored over every time my mum made me a grilled cheese sandwich. Delicious. As I have grown older, I have kept up with my sandwich creations, albeit, I try to kick it up a notch on occasion. I came up with this little creation earlier today when I noticed some chicken breast meat on sale in the market and decided to stock up.

With pesto, chicken, and balsamic marinaded tomatoes, it is a gourmet cafe-inspired creation that is easily made at home. What I love to do is create several in advance of few hours, and then make them all at once when all my flatmates are home. That way, you can make one for every member in your household!
